Szechuan or Sichuan Pepper


Szechuan Peppercorns, also spelled Szechwan and Sichuan,it is also sometimes called Prickely Ash

Szechuan pepper is not a true pepper it is aromatic, but not very hot. Szechuan peppercorns impart a tingly numbness to the mouth that is lingering.In many Asian cultures Sichuan pepper was used along with ginger to give heat to many dishes before they were introduced to chile pepper in the 15th century.Sichuan pepper is still called for in many traditional Chinese recipes.
