Cardamom has a unique aroma and flavor that is hard to describe. It is strong and also delicate. It has a sweet,yet powerful eucalyptus freshness.Cardamom is used in different ways by different cultures.In the Middle East to flavor coffee and in Scandinavian countries as a dessert baking spice. In India it is a savory spice for curries and is in many dishes.They also use them to freshen breath after dinner. Elsewhere it is used in poached fish,meat loaf,fish stews and sweet potatoes.
It is best to use the seeds directly from the pods becuse flavor is lost rapidly once removed.While cardamom is indigenous to India, today much of it is commercially grown in Central America.
